OK ! This is a really quick one as I assume you know how to make pancakes and if you don't, use this:
Sift about 125g of self raising flour and a pinch of salt into a large bowl.
In another bowl, whisk together 2 large free range eggs with 150ml organic milk and making a well in the dry flour mixture, pour the egg/milk mixture in and whisk until smooth and no lumps appear. Add about 2-3 dessert spoons of grated parmesan or cheddar cheese and put in the fridge for about 10-15 minutes
When ready, take bowl out and put a heavy base frying pan or pancake pan on the stove on medium to high heat.
THEN fry thinly sliced onions with chilli in unsalted butter or a little vegetable oil (about 1 dessert spoon) for about 2 minutes
THEN, place your pancake mixture into the frying or pancake pan and fry on both sides for about 2-3 minutes each on medium to high heat.
Serve with slices of avocado, topped with rocket or rucola, yum.
Take a pic before everyone delves in to capture all those lovely colours like I did (optional of course). This is great as a quick light lunch for the family/friends and makes about 10-12 pancakes.
